Boise based Chef Kris Komori says that the Day of Remembrance is personal. His family was impacted by the Executive Order 9066, which led to exclusion, forced removal and unjust incarceration of more than 125,000 Japanese Americans during World War II, including 13,000 at Minidoka in south central Idaho. In recognition of The Day of Remembrance, Chef Komori is dedicating a ten course meal to Japanese culture at Boise Restaurant KIN. Komori also collaborated with singer/musician Kishi Bashi for artistic inspiration for some of the dishes. Chef Komori prepared a Japanese ‘comfort food’ dish with Mellisa Paul on Idaho Today.
