Idaho Apple & Blue Cheese Stuffed Pork Chops
4 pork chops
1 tlbs olive oil
1 large apple, apple crisp, peeled, cored and diced
1/3 cup yellow onion, diced
1/4 tsp coarse sea salt
1 clove garlic
1/2 tsp sage
2 tbls blue cheese
12 toothpicks
Directions
In a skillet over medium heat, add the olive oil and onions and apples and let cook for 2 minutes.
Add the garlic, salt and sage and continue to sauté and cook for 2 to 3 minutes until the apples are tender.
Remove from heat and let cool for 3 to 5 minutes.
Slice down the middle of a pork chop to create a pocket wi the out cutting through.
Add 2 tablespoons of blue cheese to the apple mixture and combine well.
Add the apple mixture to the inside pocket of the pork chop and secure and close with toothpicks.
Place on a medium hot 425 temp grill and let cook on each side for 3 to 4 minutes or until interior temp is 145.
Remove from grill, set aside and let rest.
Serve and enjoy.
